- 1 head bok choy, sliced (white and green parts separated)
- 5 cloves garlic, minced
- 1/2 cup peanuts
- 1 Tbs. fresh ginger, minced
- soy sauce
- sesame oil
- hot pepper flakes
In a separate pan, heat another splash of oil. Add the peanuts, salt and pepper, and the hot pepper flakes. Shake the pan a bit and cook until peanuts are just brown.
Toss the peanuts with the bok choy, and mix well. Adjust seasonings to taste and serve warm with rice or noodles.
